Cranberry Cream Pie
Ingredients
- 1 baked Pie shell
- 12 oz fresh Cranberries
- 1 c Water
- 2 T Cornstarch
- 1 1/4 c Sugar - divided
- 2 Egg Yolks
- 1 c Sour Cream
- Whipped topping
Directions
- Combine cranberries, 1 c of the sugar, and water in medium saucepan
- Cook over medium high heat until very thick - about 10 minutes, stirring frequently
- While that is cooking - mix in a bowl 1/4 c sugar, cornstarch, sour cream, and egg yolks
- Add to cranberry mixture and cook until thick, stirring constantly - about 4 minutes
- Pour into crust
- Refrigerate at least 8 hours or overnight
Top with whipped topping and enjoy!
