Cranberry Cream Pie

Ingredients

  • 1 baked Pie shell
  • 12 oz fresh Cranberries
  • 1 c Water
  • 2 T Cornstarch
  • 1 1/4 c Sugar - divided
  • 2 Egg Yolks
  • 1 c Sour Cream
  • Whipped topping

Directions

  • Combine cranberries, 1 c of the sugar, and water in medium saucepan
  • Cook over medium high heat until very thick - about 10 minutes, stirring frequently
  • While that is cooking - mix in a bowl 1/4 c sugar, cornstarch, sour cream, and egg yolks
  • Add to cranberry mixture and cook until thick, stirring constantly - about 4 minutes
  • Pour into crust
  • Refrigerate at least 8 hours or overnight

Top with whipped topping and enjoy!
