Honey O'Chicken

Ingredients

  • 6 large Chicken Breasts
  • 1 1/2 - 2 c Mayo (depending on size of chicken)
  • 6 - 7 c Almond Honey Bunches of Oats Cereal (depending on size of chicken)

Assemble

  • 3+ hours or even overnight, marinate your chicken in the mayo in a covered container. Completely mix and cover the chicken ensuring a nice thick layer
  • Preheat oven to 375°
  • Crush the cereal. I use a blender, but you can use whatever works for you - food processor or a Ziplock bag and rolling pin
  • Stir the chicken in the mayo to ensure generously coated and then coat the chicken in the crushed cereal and place on an UNgreased baking sheet
  • Bake for 35 minutes or until internal temperature is 165°

Note - Normally I'm all about cost saving and fine with store brands but for this recipe, I was not happy with an off brand of cereal. Splurge and have the best chicken for your dinner!
