Chicken Salad

Ingredients

  • 3/4 c Greek Yogurt Plain
  • 1/2 c Mayonnaise
  • 2 T Red Wine Vinegar
  • 1 t Honey
  • 1/2 t Salt
  • Dash of Pepper
  • 2 c Grapes - Red or Green or Combo - sliced
  • 1/2 c Craisins (dried cranberries) - roughly chopped
  • 5 c Chicken - cooked and shredded (Rotisserie works great and no need to heat your home!)
  • 1 c Green Onions - chopped
  • 1 1/2 c Pecans - toasted and chopped

Assemble

  • Toast the Pecans - Preheat oven to 350 degrees. Place pecans in single layer on parchment on pan. Bake 5-10 minutes, until color darkens. Let cool
  • Sauce - Whisk Greek Yogurt, Mayo, Vinegar, Honey S&P
  • Mix Grapes, Craisins, Chicken, Green Onions, Pecans
  • Pour sauce over and combine

Serve well chilled. Lasts 3 - 5 days in the fridge.
