Cranberry Orange Scones
Ingredients
Scones
- 1 1/3 c Fresh Cranberries, roughly chopped
- Zest of 1 large Orange
- 1 c Heavy Whipping Cream
- 8 T Butter
- 2 C Flour
- 6 T Sugar
- 1 T Baking Powder
- ½ t Salt
Glaze
- 1 T Heavy Whipping Cream
- 3 T of fresh Orange Juice from above Orange
- 2 c Powder Sugar
Line two cookie sheets with parchment paper
Instructions
Scones
- Place the 1 c of cream in the freezer for 15 minutes.
- Melt butter in medium size microwave bowl - set aside.
- After 15 minutes combine the cream into the butter and mix with fork until it becomes lumpy
- While butter and cream are sitting - In large bowl - Whisk flour, sugar, salt, baking powder and orange zest.
- Add chopped cranberries
- Add butter / cream mixture into your dry mix with a rubber spatula until it forms a thick dough – do not overmix, but make sure all ingredients are incorporated.
- Spray large scoop and scoop out 12 scones onto the baking sheets.
- Place in fridge 15 minutes or up to 1 hour – preheat oven to 400 degrees accordingly.
- Bake 20 minutes or until lightly brown.
- Place on cooling rack.
Glaze
- Combine all ingredients until smooth.
- Glaze when scones are about 10 minutes out of the oven.
Enjoy warm or cooled! Personally – warm, they melted in your mouth with a wonderful burst of flavors!
