Super Bowl Corn Dip
Have you ever come across a recipe on Facebook, or even in a recipe book, that just looked so good you had to try it? That is this one! It didn’t even have a name – at least not on the screenshot someone else shared, but I knew I had to try it. Turned out, it was a huge success! So, I’m calling it the Super Bowl Corn Dip!
Super Bowl Corn Dip
Ingredients:
- 2 cans Mexi-corn
- 1 can Rotel – regular or hot, you choose!
- 2 c Shredded Cheddar Cheese (It’s Wisconsin, no one is judging if you add more!)
- 8 Green Onions – chopped
- 1 cup Mayo
- 1 cup Sour Cream
- 1 t Cumin
- Juice of 1 lime
- Frito Dipping Chips
Instructions
- Mix all ingredients together except the dipping chips and chill – does it get any easier?
Want to amp up the heat? Add some Jalapenos! We tried several different chips with it and it was unanimous that the Frito Dipping Chips were the best, but - go ahead, be adventurous and try others! It tasted just as good the next day, so feel free to get a jump on your Super Bowl and make it ahead of time.
