Banana (Nut) Bread

Ingredients

  • 3/4 c Sugar
  • 1/2 c Butter – melted
  • 1 1/2 c Banana – mashed (2 large or 3 medium)
  • 5 ounces Non-Fat Greek Yogurt (1 individual container works great)
  • 2 Eggs - slightly beaten
  • 1 t Vanilla
  • 3/4 t Salt
  • 1/2 t Baking Soda
  • 1 t Baking Powder
  • 1 2/3 c Flour
  • 1 c Nuts – chopped – optional
  • 1 c Mini Chocolate Chips – optional

Directions

  • Preheat oven to 350°
  • With hand mixer or kitchen aid on low, beat sugar and melted butter, add banana, yogurt (I used strawberry and tastes delicious), eggs, vanilla continually mixing on low
  • When blended, add salt, soda, powder, flour, continue mixing until fully combined
  • Fold in nuts and/or chocolate chips – mine in the picture is plain.
  • Place batter in greased bread pan
  • Bake 50 – 55 minutes until toothpick test is clean. Let rest in the pan for 5 minutes and turn onto cooling rack.

Try to wait until it is somewhat cool to slice, but don’t feel bad if you can’t wait that long! Enjoy!
