Banana (Nut) Bread

Ingredients
- 3/4 c Sugar
- 1/2 c Butter – melted
- 1 1/2 c Banana – mashed (2 large or 3 medium)
- 5 ounces Non-Fat Greek Yogurt (1 individual container works great)
- 2 Eggs - slightly beaten
- 1 t Vanilla
- 3/4 t Salt
- 1/2 t Baking Soda
- 1 t Baking Powder
- 1 2/3 c Flour
- 1 c Nuts – chopped – optional
- 1 c Mini Chocolate Chips – optional
Directions
- Preheat oven to 350°
- With hand mixer or kitchen aid on low, beat sugar and melted butter, add banana, yogurt (I used strawberry and tastes delicious), eggs, vanilla continually mixing on low
- When blended, add salt, soda, powder, flour, continue mixing until fully combined
- Fold in nuts and/or chocolate chips – mine in the picture is plain.
- Place batter in greased bread pan
- Bake 50 – 55 minutes until toothpick test is clean. Let rest in the pan for 5 minutes and turn onto cooling rack.
Try to wait until it is somewhat cool to slice, but don’t feel bad if you can’t wait that long! Enjoy!
