Pasta Ingredients
- 8 ounces High Protein Pasta - cooked according to directions, drained
- 2 c Broccoli - chopped in small pieces
- 2 c Cauliflower - chopped in small pieces
- 1 c Red Onion - chopped in small pieces
- 1 c Red Pepper - chopped in small pieces
- 1 c Bacon - cooked and crumbled
- 2 c Cheddar Cheese - Shredded
Salad Ingredients
- 1/2 c Mayo
- 1/2 c Non-fat Greek Yogurt
- 1 c Heavy Cream
- 1/2 c Sugar
- Salt & Pepper to Taste
- 1/3 c Vinegar
To assemble
- In a large bowl, combine all the pasta ingredients
- In a medium bowl, mix the first 5 ingredients of the sauce. Whisk until smooth. Add in the vinegar nd continue whisking until smooth
- Combine with the pasta ingredients, mix well
- Refrigerate
No yogurt? All mayo works great too! Feel free to modify with what you have in the house and any veggies you prefer. This is best made a few hours ahead of serving time to give the flavors time to blend/ It also lasts well for 2-3 days in the fridge!
