Rhubarb Bars
- 1 1/2 c Oatmeal
- 1 1/2 c Flour
- 1 c Brown Sugar
- 1 c Butter Flavor Crisco
- 1/2 t Baking Soda
- 1/2 t Salt
- 1/2 c Nuts of choice
- 2 T Cornstarch
- 1/4 c Water
- 3 c Rhubarb - chopped
- 1/2 C Crushed Pineapple - drained
- 1 1/2 c Sugar
- Combine oatmeal, flour, brown sugar, Crisco, baking soda, salt and nuts until well blended. (Kitchen Aid or Hand Mixer work well)
- Press 2/3 mix in greased 9 x 13 pan
- Combine in medium size pan: Cornstarch, Water, Rhubarb, Pineapple, Sugar
- Mix and Cook over medium heat, stirring frequently, until thick
- Spread over first layer in 9 x 13 pan
- Sprinkle remaining 1/3 mixture on top
- Bake at 350° for 30 to 35 minutes
This recipe can be enjoyed warm with ice cream or chilled with whipped topping. .
