Valentine's Special!
Entrée: Hot Honey Shrimp
Ingredients -
- I lb large Shrimp – raw and peeled
- 3 cups mixed Vegetables – I used frozen, but can use fresh
- 1 T Olive Oil
- 1/2 c Orzo
- 4 T Butter
- 1/2 c Honey
- 3 t minced Garlic or 4 cloves fresh
- 1 t Siracha Sauce (or hot sauce of choice)
- Salt & Pepper to taste
To make –
- Cook Orzo according to directions, strain and set aside
- Sauté Veggies in Olive Oil (may need a dab more) and set aside
- Sauté Shrimp until pink, drain off any water and set aside
- In large pan (everything will come back to this pan), melt butter, add honey, garlic, siracha, S&P. Whisk until bubbly. Add all ingredients to pan until heated thoroughly.
- Serve and Enjoy!
Dessert: Romantic Raspberry Cream
Ingredients
- 8 ounce Cream Cheese – room temp
- 3.4 ounce instant Cheesecake Pudding Mix
- 1/3 c Heavy Whipping Cream
- 8 ounce Whipped Topping – thawed
- 21 ounce can of Raspberry Pie Filling – can use flavor of choice
- 1 t Vanilla
- Chocolate Syrup – for drizzle topping
- Fresh Raspberries – for topping – or fruit of choice
- Reddi Whip – for topping
To Make
- Using mixer (hand or stand) mix cream cheese and pudding mix until nearly smooth
- Add in heavy whipping cream and whipped topping until smooth
- Fold in pie filling and vanilla
- Chill at least 2 hours
- Place in serving dish and top with Reddi whip, chocolate syrup and raspberries.
Note: This makes 8 servings – can cut in half or enjoy the leftovers! Refrigerate any leftovers.
