Crockpot Cheesy Chicken Chili

This is so easy and if serving a crowd, make sure to double it because everyone will want seconds!

Ingredients

  • 3 boneless chicken breasts
  • 1 can diced tomatoes with chilies - do not drain
  • 1 can black beans - drained and rinse well
  • 1 can corn - drained
  • 3 c chicken broth 
  • 2 t cumin
  • 1.5 T chili powder
  • 2 t onion powder
  • 1 t garlic powder
  • 1 packet ranch dressing
  • 12 ounces cream cheese
  • 2 cups shredded cheddar cheese - divided
  • 1 lb. of cooked bacon - crumbled
  • Sour cream - optional

Instructions

  1. place first 10 ingredients in the crockpot - stir
  2. place the cream cheese on top
  3. cook on low 8 hours - mix well breaking apart the chicken breasts
  4. add in 1.5 c of the shredded cheese, half the bacon
  5. Serve and top each bowl with remaining cheddar cheese, crumbled bacon and a spoonful of sour cream
