Crockpot Cheesy Chicken Chili
This is so easy and if serving a crowd, make sure to double it because everyone will want seconds!
Ingredients
- 3 boneless chicken breasts
- 1 can diced tomatoes with chilies - do not drain
- 1 can black beans - drained and rinse well
- 1 can corn - drained
- 3 c chicken broth
- 2 t cumin
- 1.5 T chili powder
- 2 t onion powder
- 1 t garlic powder
- 1 packet ranch dressing
- 12 ounces cream cheese
- 2 cups shredded cheddar cheese - divided
- 1 lb. of cooked bacon - crumbled
- Sour cream - optional
Instructions
- place first 10 ingredients in the crockpot - stir
- place the cream cheese on top
- cook on low 8 hours - mix well breaking apart the chicken breasts
- add in 1.5 c of the shredded cheese, half the bacon
- Serve and top each bowl with remaining cheddar cheese, crumbled bacon and a spoonful of sour cream
